Green Rice Casserole
1 pkg. frozen spinach, thawed
2 (10 & 3/4 oz) cans of cream of mushroom soup
2/3 cup salad oil
2 eggs, beaten
4 cups cooked rice
1 small can evaporated milk
1 & 1/2 cups grated cheddar cheese
2 cans mushrooms, drained
1 large onion, chopped
Mix spinach and 1/2 can of mushroom soup (or process in blender) Add salt and pepper to taste. Combine oil and eggs and add to cooked rice, along with spinach mixture and remaining ingredients. Turn into greased shallow baking dish and bake at 350 degrees for 1 hour. If doubled, this will have to cook longer. Serve immediately.
